Well I had the Hy-Vee ad ready to go with the finishing touches on and then it is all of a sudden GONE! I have no idea what happened and I have tried to revive the post with no luck! While I love you all dearly and want to provide you with the best weekly deals, I am not going to re-do my post.

Chicken Parmesan Recipe

This is my friend's recipe. She has made this for me on a few occasions and it has quickly become a family favorite. There is no exact science to this recipe so all you type A personalities out there will just have to guess:)

Chicken Parmesan: Feeds 4-6

Thawed chicken (I use 4-6 breasts or 10-12 tenderloins)

Flour (maybe 1/2-1 cup or so)

½ cup butter

Salt and Pepper (to taste)

Parmesan Cheese (about 1 cup)

Directions:

Melt butter and place in 9x13 casserole dish. Coat each piece of chicken in flour and salt and pepper mixture. Place in the casserole dish in a single layer. Cover with foil and cook at 350 degrees for 30 minutes. Flip chicken over and sprinkle with Parmesan cheese and cook for 30 more minutes.

Using Left Over Egg Cartons

In what I call my "previous life" before I stayed home with kids, I worked as a Family Development Specialist with Early Headstart in USD 383 Manhattan/Ogden school distict. I was P.A.T. certified and worked with families and their children on key developmental areas. Since having my own children I try to incorporate what I know about child development into my time with Seth and Levi. I am always looking for fun activities to do with them that are also fun for me:) I guess coupons aren't my WHOLE life!

With that background information you now have about me don't be surprised if you start seeing little "activity" posts popping up every now and then. I figure I have at least a few readers with young kids or know of moms who do, right?

Here is what we did with 1 of our left over egg cartons after we dyed Easter eggs.

We took the carton and colored the egg holders 6 different colors to represent the items we were using. We didn't have a pink marker, so we saved the pink items for the "non -colored" holders.

The colors corresponded to the "fuzzy balls" or pom poms that would be placed into the carton.



Then, we got out our handy dandy tweezers that light up when squeezed together (our own P.A.T. lady gave us these to use) as our tool to get the fuzzy balls into the designated colored cartons holders.

My son LOVED this activity. I loved it, too, because it focused on a few key developmental areas. Below are the key areas I was using this activity to focus on.

Fine Motor and Pre-Writing/Scissor Cutting Skills: When a child uses tweezers to pick up objects he is using his fine motor skills. The use of the tweezers aids in future scissor cutting skills as the child learns to open and close the tweezers. The use of the tweezers is also strengthening the child's hand and wrist which are important for learning to write. The stronger and more coordinated a child's hand and wrist are the easier it will be for them to grasp a writing utensil and write.

Color Matching/Sorting: The use of the colored pom poms is useful in teaching a child their colors by asking them to "match" similar colors. If they already know their colors then you can talk about "sorting." In this activity you can sort by color and size. These could be considered "pre-math" skills.

Menu Plan Monday 4/6 Edition

I see a pattern forming in my menu plans. Can you see it too? Yep, my weekly menu tends to get jumbled a bit. This week it was due to some unexpected events. I will do what I did last week and share my actual menu from last week and then what I "plan" for this week.

Last week:
Sunday: Cheeseburger Rolls with mashed potatoes and corn
Monday: Cheesy Penne Bake with salad
Tuesday: left over bbq pork (from the weekend)
Wednesday: Friends invited us over dinner (it was fabulous!)
Thursday: Husband worked a track meet and was fed at the school. Kids and I had sandwiches.
Friday: Pizza and raw veggies
Saturday: Jason's Deli (Topeka has .99 kids meals on the weekends!)

This week:
Monday: Chicken Tetrazzini, steamed broccoli and bread
Tuesday: Biscuits and gravy with potatoes and fruit
Wednesday: Left overs (Husband has track meet, he will be fed at the school)
Thursday: Parmesan Chicken with sweet potatoes and Caesar salad
Friday: Pizza and raw veggies

I will post the recipe I use for Parmesan chicken tomorrow. In the mean time what on earth do you use cream cheese for? I was able to get 6 packages for only .23/1 after a sale and catalina at Dillons this week! I would love your ideas:)

Hy-Vee: Double Coupons Extended Through April


It looks like double coupons were a hit at our Topeka store so they are extended their double coupon promotion! It works just like before. Every Tuesday in APRIL our Topeka Hy-Vee will double coupons.

All coupons .50 or less will be doubled in their value and all coupons .51 or more will become $1 in value. So the MAXIMUM DOUBLED VALUE =$1 per coupon (same as Dillons/Kroger)

It Was A GOOD Morning!

Here are some of the items I found this morning... a few were in use by the time I was able to snap a picture:)

I have had a list of wants and needs for children that has been waiting for garage sale season. It was as follows:

Tricycle for Seth (not a need but a want)
3T summer pjs

4t winter pjs

3t/4t casual shirts for summer (5-6 would be good)

size 8-9 sandals for Seth

size 8-9 tennis shoes for Seth


I woke up this morning at 6:30, grabbed my coffee, did a quick check of my email, and out the door I went to meet my friend. We were hitting up the Sherwood garage sales early! Before I met her, I do what I usually do, that is to pray that God would supply what I needed. He knows my needs, He can see my list, and He definitely knows that I rely heavily on garage sales to meet a lot of our clothing/toy needs and wants.

It was kind of slow going at 1st. It seemed that every sale we came to had nothing but girls' clothes. Thankfully, that is what my friend was on the hunt for! At the last few sales we came to I hit the jack pot, finally!

All for $25 dollars this is what I found:
1 Men's K-state t-shirt=$1 (my hubby can always use these!)
1 Women's Old Navy Puffy Vest for $1 ( not a need, but for a $1 you can't pass that up when you are on a tight clothing budget:)
5 pairs of summer sandals ranging in size 8-9 for only $2

I love it when God provides what I need and throws in a want like the tricycle, also! It was a GREAT MORNING and it was so fun to share with a friend!
