Recipes for Strawberries!

I know yesterday I said I would post my homeade chicken nuggets recipe today but I had a change of plans. If you were able to get in on the Hy-Vee 3 day sale you may have picked up a 4lb. box of strawberries for only 2.98! If you have been Aldi today or are going their 1lb. tubs of strawberries are only $1 for TODAY ONLY! These strawberries are such a great price because they need to be used quickly! Thanks to a few friends here are 2 recipes that can help you use up all those strawberries!

Strawberry Muffins
from Betty Crocker's Best-Loved Recipes
makes 12 muffins
Ingredients:
3/4 cup milk
1/2 cup vegetable oil
1 tablespoon grated orange peel
1 egg
2 cups all-purpose flour
1 cup chopped strawberries
1/3 cup sugar
1 tablespoon baking powder
1/4 teaspoon salt
Pecan Streusel Topping

Pecan Streusel Topping:
1/2 cup chopped pecans
1/2 cup packed brown sugar
1/4 cup all-purpose flour
2 tablespoons melted margarine or butter
**Mix all ingredients until well blended.

Directions:
1. Heat oven to 400 degrees. Grease 12 medium muffin cups, 2 1/2 x 1 1/4 inches, or line with paper baking cups.
2. Mix milk, oil, orange peel and egg in large bowl until well blended. Stir in remaining ingredients except Pecan Streusel Topping, just until moistened.
3. Prepare Pecan Streusel Topping. Fill muffin cups two-thirds full with batter. Sprinkle batter with Pecan Streusel Topping. Bake 15 to 20 minutes or until toothpick inserted in center comes out clean.

Baked Strawberry Pie (friend's recipe)

Ingredients:
Pastry for 1 double-crusted 9-inch pie
4 ½ cups drained, stemmed, halved strawberries1
¼ cup sugar
4 tablespoons minute tapioca
2 tablespoons cornstarch
½ teaspoon salt
1 tablespoon butter

Directions:
Mix strawberries with sugar, tapioca, cornstarch, and salt. Let stand while making crust. Spoon into crust. Dot with butter. Cover with top crust. Vent. Bake at 425 degrees for about 40 minutes.
