Banana Muffin Recipe

This is my aunt's recipe I use when I make banana muffins. I usually double or triple this and freeze most of the muffins for breakfast or snacks.

Banana Muffins: Yields 12 muffins
  • 3 bananas mashed
  • 1 egg
  • 1/4 c. butter
  • 1 tsp. vanilla
  • 1tsp. baking soda
  • 3/4 c. sugar
  • 1 1/2 c. flour
  • 1/4 tsp. salt
Just combine all ingredients together and pour into a lined or greased muffin tin. Bake at 350 degrees for about 20-25 minutes or until done and brown on top.

If I have chocolate chips on hand I put about 1/2 c. into the batter and then sprinkle a little on top with some sugar. These make for a great snack or dessert!

Would it work to use bananas I have frozen? ... and ... do you know how long bananas last in the freezer?
