Cheesy Chicken and Rice: Price Breakdown

This is a recipe a friend shared with me that has quickly become a family favorite. I actually changed it a little to make it cost less, yet still feed the same amount of mouths. Below you will see the recipe and prices.
Cheesy Chicken and Rice Casserole (feeds 6)
  • 1 can of cream of chicken soup (.45 cents at Aldi)
  • 1 c. cooked white rice (I am sure you could use brown if you prefer)= .20 (this is a guesstimate... there are 7.5 1 cup servings in a bag of rice you can purchase at Aldi for around 1.20 I think)
  • 1/2 tsp. onion powder (I have found garlic powder works well too) (pennies!)
  • 1/4 tsp. ground black pepper (pennies!)
  • 2 c. frozen mixed veggies (a 16 oz. bag costs around .99 at Aldi)=.99
  • 2 skinless, boneless chicken breast halves (1 lb.) A 3 lb. bag at aldi is 6.59, so 1 lb.=2.20
  • 1 c. (or less)shredded cheddar cheese (I don't pay more than 1.78 per 2 cup bag) 1 cup=.89
What you do:
I cube and cook both chicken breasts in a little olive oil. While I do that I cook the rice (rice cookers are the best) and defrost the veggies (microwave). I then combine all ingredients but the cheese together in a 11x8 dish. I might add a little extra water so the rice doesn't dry out. I then cover and bake it at 350 for 20- 30 minutes, or until warm in the middle. I uncover and top with cheese, and cook for a few minutes longer until cheese is melted.

Altogether this meal costs around 4.75 to make or around .80 cents a serving! You can make it on less too if you find marked down chicken or cheese and veggies for a better price!

I hope that sounds easy enough and this has been a great way to get veggies into my toddler! He hardly notices they are there... even the peas!
